VEGETABLES

Vegetables and Fruits. About 50% of the total quantity of food in your daily regimen should be in the form of vegetables and fruits. It's best the latter to be eaten raw but if this is not possible apply as less heat treatment as possible. Stay informed about their origin - fruits and vegetables from the Netherlands, Turkey, Greece, Spain tasteless and if they hardly have any it is of plastic or rubber. Buy Bulgarian agricultural products - support the efforts of the people in the field!

Spinach

Spinach is rich in iron. Why iron is important for the body? It is the metal on whose surface by changing its valence from third to second the oxygen binds to haemoglobin in your lungs. Put more simply without iron you become anaemic, to the tissues and cells in your body accesses less oxygen (a condition of hypoxia). Therefore eat spinach. Best option is to make a salad of it garnished with some grated carrots, a cucumber and flavoured with squeezed lime, salt and sunflower oil. Do not overdo with spinach because it contains oxalates and these as it is well known derive calcium from the body. I recommend eating spinach 2-3 times a week especially in winter. This is a food that causes one of the most alkaline reactions in the body.

Carrots

Carrots are rich in beta-carotene. This is a compound formed from eight isoprene molecules. It gives orange coloration to the carrots as well as the red colour of the tomatoes, etc. The more red is a vegetable the more beta-carotene there is in it. The usefulness of beta-carotene is multifaceted but it is the starting material which is used to be produced vitamin A in the body. It is known that vitamin A helps to maintain good eyesight and that is why it is called retinol. But how does beta-carotene in carrots turn into vitamin A in the body? Simply spread on a carrot cow's butter and in the digestion of this combination in the mouth and later on in the intestines a reaction is carried out of tearing of these eight isoprene-molecular substances to two compounds having four isoprene molecules. The resulting new compounds are vitamin A.

Green and Red Pepper

Pepper is very rich in vitamin C. The red one contains twice the amount of the green but in general both of them are rich in this precious vitamin. An important fact about the pepper in terms of sufferers from arthritis is described below in chapter "Diseases, drugs and treatment". Excellent, useful and very easy to prepare is a breakfast made of stuffed peppers with cheese. Any kid loves it.

Cauliflower and Broccoli

These are highly alkaline foods from the cabbage family which steamed or prepared in the form of lean meal are excellent for old people because they oftenly suffer from impaired intestinal motility (peristalsis) and for those who have problems with their teeth. You can make a very simple salad with scalded cauliflower or broccoli by simply season them with a bit of dill, lemon, sunflower oil and salt.

Cabbage

Never forget to include in our diet cabbage - both fresh and sour. The ballast substances, particularly the fibers in it are invaluable to cleanse the intestines of the accumulated slag of insoluble deposits thereon.

Onion and garlic

These are the nature's antibiotics. Eating of a half or whole onion a day or a few cloves of garlic will provide you unparalleled immunity against colds better than any pharmaceutical mix of vitamins. Onion and garlic are also aggressive foods and you should consider whether your stomach is prepared for them. Never eat them on an empty stomach but with or after taking at least a piece of bread or a piece of white cheese.

Other recommended vegetables

Cucumber, red beetroot, tomato, lettuce, radishes and alike.

FRUITS

Fruits are important and vitamin-rich food. My preference are apples, bananas, strawberries, raspberries, cherries, peaches, apricots, grapes, pears, pumpkin, kiwi, lemons, oranges. Bananas are a rich source of potassium. As I mentioned above, potassium gives strength to the heart so it may beat tirelessly but the hyperkalaemia (too much potassium in the blood serum) is a dangerous medical condition for the heart. You must avoid overdoing with bananas because these are also very caloric and are a prerequisite for obesity.
